From the prefix 'er-' (achievement) + 'Beute' (booty, prey). It literally means 'to make something into booty/prey'.

Think of a pirate yelling 'Er hat die Beute!' (He has the booty!). The verb 'erbeuten' is the action of getting that 'Beute'.
